Lowcarb bread

Bread! Everybody likes bread! There is nothing like a fresh baked sourdough bread with crispy crust! But however, I rarely eat it, because I am on a low carb 10 years younger lifestyle. I don’t want to mess with my blood sugar or make my cells resistant to insulin, promoting inflammation and belly fat. So on a daily basis I want my bread to be without grains, flour, gluten and starch, which is very hard to find in the supermarked, here in Denmark at least, so I make it myself. You can try it!

One big bread loaf; glutenfree, sugar free, low carb, keto, paleo.

Preheat the owen to 170°C / 338°F

Ingredients

150 g of mix of almonds and nuts (just have them whole)

600 g mix of seeds; flax-, sesame-, sunflower-, and pumpkin seeds

4 eggs

100 g avocado oil or melted butter

100 g creme fraiche 38% fat

1-2 tsp ocean salt

Method

Mix eggs, oil or butter and creme fraiche together.

Add all the seeds and mix.

Bring the dough to a baking form for bread, even the surface and make sure there is no air pockets.

Bake for 60 min.

Remove the bread from the oven at let it cool down in the form and then rest for 4-10 hours before you cut the first slice.

Keep the bread in a cool place.
